Easy Pumpkin Spice Cake Recipe

A quick and easy Pumpkin Spice cake recipe made easily with a boxed cake mix, a few spices, cream cheese frosting and chopped pecans.

Ingredients

  • 1 box spice cake mix
  • 1 cup canned pumpkin
  • 3 eggs
  • ½ cup water
  • ¼ cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice

Cream Cheese Frosting

  • ¼ cup butter, softened room temperature
  • 1 8 oz. block cream cheese
  • 2 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ cup chopped pecans (optional, for topping

Instructions

  • Heat oven to 350 degrees f.
  • Grease and flour 13" x 9" baking pan.
  • MIx ingredients together in a bowl for 2-3 minutes.
  • Pour into prepared pan.
  • Bake 30 - 35 minutes until toothpick comes out clean.
  • Cool and frost with frosting recipe below.

Cream Cheese Frosting for Pumpkin Spice Cake

  • Blend cream cheese, butter, vanilla and cinnamon in a bowl until light and fluffy.
  • Top each square with a dollop. Sprinkle with chopped pecans.
