Meatball Soup (Albondigas)

Ingredients

  • 12-14 meatballs (see above for recipe}
  • 2 48 ounce boxes chicken broth can use cans if desired
  • 1 28 ounce can whole tomatoes
  • 1 8 ounce can tomato sauce
  • 3 tablespoons onion chopped
  • 2 stalks celery chopped
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon pepper

Instructions

  1. In a large pot over medium heat, saute onions and celery in hot oil until onions are translucent
  2. Add remaining ingredients except meatballs and bring to a boil.
  3. Add meatballs and reduce heat. Simmer 15 minutes and serve
