Easy Pineapple Upside Down Cake

This -Pineapple Upside Down Cake makes a perfect light summer dessert.

Equipment

  • square baking pan or round cake pan
  • Hand or stand mixer

Ingredients

  • 1 box vanilla cake mix
  • 1 cup brown sugar
  • 2 eggs
  • ¼ cup butter softened plus
  • ½ cup butter melted
  • 1 8 oz can pineapple slices and juice
  • ½ jar of maraschino cherries
  • ½ cup of water

Instructions

  • Heat oven to 325° F
  • Melt ¼ cup of butter in 8 x 13 baking pan while oven is warming up.
  • Sprinkle 1 cup brown sugar all over the bottom of the baking pan with melted butter.
  • Add pineapple slices and cherries in a single layer to the bottom of the butter and brown sugar mixture. .
  • Set aside.
  • Meanwhile in a bowl, combine cake mix, 2 eggs, ½ cup melted butter, one half cup water, and remaining pineapple juice from can.
  • Mix together and pour batter over the pineapple and cherries in pan.
  • Place in preheated oven and bake for 45 to 55 minutes until toothpick comes out clean.
  • Immediately upon removing cake from oven, use a knife to loosen the edges of the pan.
  • Invert onto a platter and let cool before serving.

Notes

I made this cake using pineapple chunks, but the classic version uses pineapple rings, so you can use either. If using rings,  place each cherry in the center of each of the pineapple rings.
