Peach Pecan Muffin Recipe

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 eggs
  • ½ cup oil
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup fresh peaches
  • 3 tablespoons pecans chopped

Instructions

  1. Preheat oven to 375
  2. Line pan with baking cups or grease muffin tin
  3. Peel peaches, remove seed.
  4. Chop peaches into small chunks.
  5. Mix the dry ingredients together in a mixing bowl.
  6. Add eggs and oil to dry ingredients.
  7. Gently fold in peaches.
  8. Pour into muffin tins about half full.
  9. Sprinkle with chopped pecans.
  10. Bake for 25-28 minutes.
