Now that school is in session, work and home life has become very busy for me. We just finished our first week of school and by the time I got home the other night, I did not have a lot of energy to cook a full meal for my family. It’s nice to know that on nights like this, I can reach into my freezer for some help from Barber Foods.
What’s awesome about Barber Foods is that they have been around since 1955. They recently updated their recipe and I like it is even better now! The chicken breasts have a wonderful flavor and crunch on the outside, and are juicy, tender and flavorful on the inside.
Their new frozen Stuffed Chicken Breasts, are a tasty idea for dinner that I can put in the oven and let them bake while I get something else done. Multitasking at its best when I can do a couple of things at the same time our dinner is cooking.
These chicken breasts come individually wrapped, which is great because depending on who is home, I may want to make just a few or many if there is a crowd.
To make things easier on myself, I had made a cranberry and broccoli salad the night before, which is perfect side dish to complement this easy meal. Once the chicken breasts are done, (by reaching an internal temperature of 165°), all I have to do is serve them with my salad. A busy weeknight family dinner does not get much easier than that.
I love the tasty dinner that I am able to put on the table without too much effort on my part. These stuffed chicken breasts are nice and crispy on the outside and delicately flakey on the inside. They are great for a family gatherings or impromptu dinners with friends.
These are the Stuffed Chicken Cordon Bleu and are delightful.
The Cranberry and Broccoli Salad complements it nicely and makes the dinner simply special!
Barber Stuffed Chicken Breasts come in several varieties – Cordon Blue, Broccoli Cheese, and Chicken Kiev. You can find them in your grocer’s freezer. I found mine at Ralphs.

Broccoli and Cranberry Salad Side Dish
Weeknight Dinner Idea
- 3 cups fresh broccoli washed and chopped
- 1/2 cup shredded carrots
- 1/2 cup cranberries
- 1/4 cup red onion chopped
- 6 strips bacon cooked and chopped
- 1 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 tablespoon sugar
- Mix the first five ingredients together in a large bowl.
- In a small bowl, blend the mayonnaise, vinegar and sugar.
- Add mayonnaise mixture to vegetables and combine.
- Chill at least one hour.
Tasty Tip: These are great to keep on hand in your freezer for a weeknight dinner idea when you know you are going to be busy or might have a few friends over for dinner.
