Strawberry Muffins for California Strawberry Day

Hurray! Spring is officially here as of yesterday and today is California Strawberry Day! Last year I went to a fun Strawberry Festival in Oxnard and today I am celebrating by making some simple strawberry muffins.  The best part is that these little babies only have 5 ingredients so they can be whipped up quickly. Talk about an easy muffin recipe.

Strawberry Muffins

2 cups baking mix

⅔ cup sugar

1 egg

⅔ cup milk

¾ cup strawberries, washed (you can use frozen, if thawed too)

 

Preheat oven to 400 degrees. Prepare muffin tin with baking cups or grease muffin tin.

Chop strawberries into small bite sized pieces.

In a bowl, mix together baking mix, sugar, egg and milk.

Batter will be a little lumpy.

Add strawberries and fold into batter.

Pour batter in baking cups.

Bake for 14-16 minutes until golden brown. Let cool 4-5 minutes.

    Oh I love Strawberries, When I drive through the mountain to San Diego, I can't help but stop at every fruit stand and get Strawberries. I'm going to have to schedule a trip just because you reminded me of the Strawberries 😉

    Happy Thursday ...

    I "think" I love your strawberry muffin recipe, but I need some clarification please. I read "baking mix" ... what do you mean by "baking mix?" Is that code for Bisquick?

    I had no idea there was a Strawberry Day. We love strawberries. I wonder if there is a celebration anywhere closer to me? I will have to mark it down to check for next year. I am bookmarking this recipe though, because I just planted a bunch of strawberries plants in the backyard and these look yummy!

    I just made these and I ate one right out of the oven because I couldn't wait....they were AMAZING!!! I did however increase the strawberries by double (or maybe a little more) just because the 3/4 Cup didn't look like enough. I think the extra berries made the muffins more moist and maybe a little sweeter. I think I will serve these for dessert tonight with a scoop of vanilla ice cream! 😉
