Now that the holdaysÂ are over, I usually try to eat a little heathier to make up for all of the cookies, cakes and other goodies I sampled. Â One of my favorite go to recipes is a simple chopped salad. Â All of the fresh ingredients are so tasty and the garbanzo beans, help to make it a filling meal choice.
Simple Chopped Salad
4 cups chopped iceberg, romaine Â and butter lettuce (any combination)
1/2 cup julienne sliced salami
1/2 cup deli turkey or ham chopped into 1/2″ pieces
3 tablespoons chopped onions
1 can garbanzo beans
1 package cherry tomatoes
1 cup mozzarella cheese
Mix ingredients together. Â Chill until ready to serve. Â Just before serving, toss with bottled or Â Homemade Balsamic VinaigretteÂ Dressing. Â Serve with a crusty loaf of bread.
