nFuse Bar and Kitchen

The newly created nFuse Bar and Kitchen is part of the recent $15 million renovation recently completed at the Anaheim Marriott. When I was in college, we used to come to the Anaheim Marriott quite a bit when we would go to the theme park and celebrate holidays. The hotel transformation is really beautiful and a great place to chill. The guest rooms have been renovated and are tech-forward with work desks, high-speed internet and extra power outlets in the rooms. Oh and Wifi is free to all Marriott Rewards members.

What is nFuse Bar and Kitchen?

The nFuse Bar and Kitchen offers and revealing retreat for an evening of relaxation find food tasty cocktails and live music. I recently went to an event to preview nFuse.


The social lounge is stylishly appointed with the comfortable, cozy seating and lots of areas to sit back, relax and socialize, if you choose. There are also massive screens where you can watch sports and entertainment.

Of course there is also a trendy and sophisticated bar area where you can take in a cool beverage.

Looks like fun right? Well when I stepped up to the bar that evening, I tried one of their signature drinks, the California Love. Talk about a refreshing and tasty drink. This delicately sweet drink has the best flavors of California blended together.

nFuse offers a nice and relevant selection of handcrafted cocktails that reflect the casual and local flavor of Southern California. The social lounge also features top shelf wines and spirits,  24 beers on tap and an array of perfectly aged Bourbons.

The nFuse Bar and Kitchen also produces tasty California Cuisine made from fine ingredients and fresh local produce. That evening, I had the chance to talk to chat with Chef David Dulkis who has been creating farm to table delectables for a very long time. He has a flair for creating regional cuisine with global influences and loves incorporating new flavor combinations into his menu.

He proved this to me with his Roasted Beets and Arugula, oven roasted yellow and red beets, rocket arugula, Bluelake Beans heirloom tomatoes, lemon nfused olive oil, and maldon sea salts. The vegetables are procured from local California farms and are incorporated into the menu and their fresh flavor reflects that.



I also loved their Kale Chopped Salad with green kale, fresh grilled corn, romaine hearts, iceberg wedge, heirloom tomatoes, sweet peppers, local gala apples, California blue cheese and pumpkin seeds all drizzled with a red wine vinaigrette.

Oh but the lamb pops! The lamb pops I tasted that night were like butter and melted in my mouth. They were the best I’ve ever tasted and are a specialty of the chef. I personally recommend you try these.
They also had an amazing Lobster Macaroni and Cheese. Iamgine, lobster with pan roasted shallots, fresh local pasta, all open fired and crusted into a comfortable decadence. Um, so I was too busy eating it to take a photo for you, but it was good. Sorry about that.
The Fish Tacos that are marinated wild caught mahi mahi, with house fire roasted salsa, local stone ground corn tortillas, cotija cheese, and chipotle crema agria was a huge it and is served with their house made slaw. One of my favorites was the Ahi and Mango Towers which were made with Yellow fin tuna, fresh ginger, green onion, mango, California Hass avocado, citrus ponzu & wasabi aioli.



Yum! I am getting hungry just writing this. Oh and one more must try – if you do go, make sure you try the Adult Milkshake. Made with Godiva chocolate liquor & Chocolate & sweet cream, Chambord, Vanilla bean & raspberry.  I know right?


There is also entertainment in the lounge. That evening David Michael Harris performed a great set of his own songs and some 1990 standards setting the mood for a really fun evening!

If you are visiting the Anaheim area be sure to check them out. Whether you are on vacation, spending a day at a theme park, or in town for a convention, the infuse kitchen and socialize is definitely worth a visit.
