Keeping it Simple with Real Life Dinners from Rachel Hollis

Hello Friends! I hope you had a great weekend and if you celebrated, a wonderful Father's Day with family. I have been so busy lately with school ending and my mom's medical issues that I had not had a chance to share a wonderful new cookbook from Rachel Hollis. I recently received a copy of her new book, Real Life Dinners: Fun, Fresh, Fast Dinners from the Creator of The Chic Site.

If you didn't know, Rachel Hollis is the founder of the lifestyle website, The Chic Site, and the author of Upscale Downhome and the New York Times bestseller Girl, Wash Your Face. She was also named one of Inc. Magazine’s "Top 30 Entrepreneurs Under 30,”

I met Rachel at a blogging event a couple of years ago and she is sweet, very energetic and down to earth! I also think she is amazing at time management. Her new cookbook has some tantalizing recipes that I cannot wait to try,

Real Life Dinners book

I love all of the beautiful photos to show each step of the process.  Some of my favorites are:

  • Cedar-Plank Salmon - a wonderful weeknight choice and looks delicious.
  • Skillet Huevos Rancheros - these are perfect for an easy like a Sunday morning brunch.
  • One-Pot Chicken and Mexican Rice - one pot meals are the best. The Creamy Basil Tomato soup pictured above also looks wonderful.
  • Spinach Chicken Bake - another great dinner idea with just a few ingredients.

 

 

Real Life Dinners book

 

Each recipe also has the prep time, cook time and servings information clearly visible which helps when looking for some inspiration. I also love the inclusion of the Spice Blends recipes. I love streamlining recipes and you really can save time by having prepared spice blends on hand.

Other great time-savers are the Freeze-Ahead dishes. With a little bit of meal planning, you can have several beautiful dinners on hand with just a few hours of prep work.

    Yum to breakfast quesadillas. And to the salmon! And probably to the whole book!!
