Happy St. Patricks Day Weekend!
I am celebrating all weekend so today I am making some Irish Cream Cookies for a party! In celebration of St. Patricks’ Day these cookies have some Baileys Irish Cream in them. This is part of the Spiked Recipe Challenge that This Gal Cooks and Frugal Foodie Mama are hosting and this month’s beverage of choice is Irish Cream. Their challenge is to come up with a recipe using the beverage for anything but a drink!
I decided to take this challenge by whipping up these cookies.
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1/3 cup Irish Cream
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt.
Preheat oven to 350 degrees. Cream together butter, sugars, eggs, vanilla and Irish Cream. Combine dry ingredients in a separate bowl. Slowly add to butter mixture.
Drop onto greased cookie sheet by 1″ balls. Flatten before baking.
Bake 14-16 minutes until golden on the bottom.
They are soft and flavorful with irish cream. Great with a cup of tea or coffee!
