Hello Friends! Today I am sharing an easy weeknight recipe idea that I discovered on a recent grocery store trip. If you haven’t heard, there is a new Foster Farms DORI™ QR code that allows you to scan for suggested recipes for the chicken you purchase along with savings and more. If you have not seen it, check it out at your local grocery store and look for the specially marked packages with DORI™ on the label.
On those packages, you will find a scannable QR Code. All you have to do is use your iPhone or Android camera to scan, and you’ll have access to coupons, hundreds of original recipes using Foster Farms chicken, savings and other chicken info. So perfect for evenings when dinner is a late afternoon decision.
I found some great ideas for the chicken breasts, under the 30-Minute Weeknight Meals category. The recipes I was considering were;
● Lemon Tarragon Chicken Toss
● Parmesan-Crusted Chicken Tenders
● Grilled Lemon Chicken
All of the recipes sounded really good for a new dinner idea and they were all relatively easy to make. I decided to go with the Grilled Lemon Chicken recipe because I loved the idea of adding a little lemon and fresh thyme.
I knew exactly what ingredients I needed for the recipe, and I had most at
home, so I just needed to pick up some fresh thyme and lemons. I didn’t have to spend a lot of time figuring out what to make, so once I got home, I started the marinade as directed and then threw the chicken breasts on the grill.
In just minutes they were ready, so I topped them with more thyme. I also added about a teaspoon of Caesar salad dressing and served them with a slice of lemon and a sprig of thyme for presentation.

Grilled Lemon Chicken Breast with Thyme

4 Foster Farms Boneless Skinless Chicken Breasts
½ cup reduced-sodium chicken broth
1 tablespoon finely shredded lemon zest
¼ cup lemon juice
1 tablespoon finely snipped fresh lemon thyme
¼ teaspoon ground black pepper
2 lemons, halved
Place the chicken in a sealable plastic bag in a shallow bowl. For marinade,
in a small bowl, stir together broth, lemon zest, lemon juice, 1 tablespoon
thyme and pepper.
Pour over chicken.
Seal bag.
Marinate in the refrigerator for 1 to 2 hours, turning bag occasionally.
Drain chicken, reserving marinade.
Grill chicken on the rack of an uncovered grill directly over medium coals
for 12 to 15 minutes or until no longer pink, turning and brushing with
marinade halfway through grilling.
Discard any remaining marinade.
Add lemon halves to grill for the last 3 minutes of grilling.
Serve chicken with grilled lemons and, if desired, top with additional fresh thyme.
This recipe was delicious! We loved it and will make it again. It was easy and quick to make too. You can even marinate the chicken overnight.

It looks so fresh. I'm a bit familiar with Foster Farms and always impressed by their standards. This is a perfect year-round meal.
