Grilled Fontina Cheese Sandwich with Bacon & Arugula

Happy Grilled Cheese Sandwich Day! I have loved grilled cheese sandwiches since I was a kid, but I do not eat them with just cheese and bread any more. I have a wonderful sandwich that I make with Fontina cheese, bacon, arugula and red onion that is really tasty. There is nothing like a grilled fontina cheese sandwich!

Now, you can make this on a panini press if you have one, or on the stove, but I like to make these in the oven. They are simple to make and so very tasty. Crunchy on the outside and tender bliss on the inside.

For each sandwich you will need;

2 pieces of bread, artisan or sourdough works well

a few slices of Fontina Cheese

2 cooked bacon slices

baby arugula

sliced red onions

butter

If you are going to use the oven, preheat to 425 degrees.

Spread one side of each slice of bread with softened butter.

Layer with slices of cheese,

Then add the cooked bacon

Then the arugula,

Then add onion,

Place the other piece of bread on top, butter side up.

Heat in the oven on a cookie sheet for 4-5 minutes. Flip over sandwich and leave in another 3-4 minutes until outside of bread is brown.

Honestly, this sandwich is better than some of ones you get at the specialty deli shop and they are so simple to make.
