These Easy Apple Muffins are one of my go to recipes when I have a hankering for apples and cinnamon. This is one of those quick muffin recipes because I use a couple of short cuts. Saving time in the kitchen is really a plus this time of year because fall is a very busy season for us.
I do love the apple flavor and how light these muffins are too!
These make the best apple muffin recipe because they are made with applesauce, so no coring, peeling and baking of apples is necessary to make these. I also use a baking mix (like Bisquick or Jiffy) to streamline the recipe. I have used regular applesauce and cinnamon applesauce to make this recipe and they both work great. They are like having the season of fall in a muffin!
Easy Apple Muffins
2 cups baking mix (such as Bisquick or Jiffy)
3/4 cup applesauce
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup milk
1 egg
1 tablespoon oil
1 teaspoon cinnamon
Preheat oven to 400°.
In a mixing bowl, add egg and sugars and combine.
Add baking mix, applesauce, oil, cinnamon and milk until blended.
Pour into greased or lined muffin tin.
Bake for 14-16 minutes until toothpick comes out clean.
This recipe makes about 14-16 standard muffins.
