It's time for another dessert challenge. This time the ingredients were Coca Cola and cherries. Now I love a good cherry coke cupcake but I decided to try something different. I introduce to you the Coca Cola Cherry Brownie.
I made these the other evening while watching the Olympics. My favorite winter event is the ice skating. Wow the things that they do now as part of their routine absolutely blow me away. They have taken the sport to an entirely new level and it looks beautiful.
I like to think that the blending of Coca Cola and cherries is like an ice skating team, blended together to make something beautiful. To learn more about the challenge, click on the image below. This is a fun twist for Valentine's day, a fun and simple dessert, or a diner or 50's themed party. The brownies will be cake like and balanced nicely with a moist, creamy frosting.
Coca Cola Cherry Brownies/Cherry Coke Brownies
1 package brownie mix
1 egg
⅔ cup cola
Pre-heat oven to 350°. Prepare a 13 x 9 inch baking pan by greasing with shortening or butter. Mix ingredients together in bowl. Bake for 27-30 minutes. Let cool. Meanwhile, prepare frosting. When fully cooled, cut into serving squares and frost. I used a decorating tip to add frosting.
Cherry Cream Cheese Frosting
3 cups powdered sugar
4 oz cream cheese, softened
½ cup canned cherries
Cream cheese in a stand mixer. Add cherries and blend. Slowly add powdered sugar on low speed. Once all of the sugar is added, whip on high speed. The cherries will turn the frosting pink. Frost brownies when completely cool.
