Today I am sharing a Classic Egg Salad Recipe like grandma used to make. This homestyle chicken salad recipe is made easily and tastes delicious. It is also a very inexpensive meal idea for times when you want a cheap meal idea!
Egg salad is one of those dishes that reminds me of simpler times and it is so easy that sometimes I forget that I have everything I need to make it in my refrigerator!
Hello Friends! I hope you had a marvelous Easter weekend! We did a little traveling and enjoyed connecting with family.
Our family was in three different states this year, but thanks to phone technology we were able to enjoy each other from afar. We were able to see a concert this weekend and enjoyed more chocolate-covered eggs than I probably should have.
This recipe is perfect as a way to use leftover hardboiled eggs that you may have leftover.
I grew up in a family where we did not waste when possible, so you may want to keep it for those times when you need to use up eggs.
This easy egg salad recipe makes a nice salad, side dish or lunch idea. If you are wondering, How do you make an egg salad sandwich?
The answer is easy! just put some of the salad in between two pieces of bread or enjoy on crackers too! It also tastes great on in pita bread or in a croissant.
You can make it as a great take-along lunch idea too! I recommend packaging the salad and the bread separately until ready to eat. These are great for picnics and barbecue gatherings.
Ingredients for Egg Salad
Eggs - I use Grade A large from the grocery store. You will need to make hard-boiled eggs. Directions here.
Mayonnaise - Use your favorite brand
Mustard - For classic egg salad, use yellow prepared mustard.
Spices - Salt and pepper work best and you can add a little paprika if you like.

Variations for this Recipe
This recipe is great on its own, but you can change it up by adding the following:
- Bacon - Add 4 stripes of chopped, cooked and drained bacon. Bacon always goes great with eggs!
- Tomatoes - add chopped tomatoes on top.
- Dill - Mix in ½ teaspoon of dried dill to the mixture.
- Elote Seasoning - Add ½ teaspoon of Everything but the Elote Spice to the mixture.

Classic Egg Salad
Ingredients
- 8 hard-boiled eggs, peeled
- ½ cup mayonnaise
- 1 teaspoon mustard
- ¼ salt
- 1 pinch pepper
Instructions
- Rinse peeled eggs and pat dry.
- Chop eggs and place in a medium bowl.
- Add mayonnaise, mustard, salt and pepper, and blend.
- Serve as a sandwich, salad or on crackers.
- Store covered in refrigerator 2-3 days.

Definitely a classic! I was born in the 80s and grew up on this. My mom would add in finely chopped celery and onion too! Adds a nice crunch! We even had an egg chopping tool since we had this so often.
