The weather in Southern California has been hot and more humid than usual this year. I do not mind the heat but the humidity can zap my energy. During these high temperature, low energy days, I enjoy making salads for meals. This recipe for Bacon Pasta Salad which is a great dish for summer evenings, picnics and barbeques.
Best of all, it is fairly simple to prepare and only takes a few minutes. One of the things I love about this pasta salad is that it is refreshing and filling at the same time. You can also use whole-wheat pasta in this recipe, if you prefer. I use a homemade Basalmic vinaigrette dressing, but you can use a bottled version to save time.

Bacon Pasta Salad
2 cups uncooked pasta, (I used bow tie)
1/4 cup onion, chopped
1/4 bell pepper
1/3 cups fresh Roma tomato, chopped
6-9 strips cooked bacon, chopped
1/4 cup balsamic vinaigrette dressing
Bring 7-8 cups of water to a boiling in saucepan. Cook pasta per package directions.
Drain pasta and run cold water over pasta.
Add bell peppers, bacon, onions, tomatoes and blend together.
Add tomatoes, and balsamic dressing and stir. Sprinkle with parmesan cheese, gently toss salad and chill in refrigerator at least one hour.
