I visited Solita Tacos and Margaritas recently for the first time to check out their lovely Bella Terra location. This Huntington Beach restaurant is a relaxed and inviting neighborhood eatery that offers an extensive and fresh array of Mexican cuisine.
Offering a nice selection of cocktails, wines and craft beers, I decided on of their Watermelon Margaritas. So refreshing and thirst-quenching, with just the right about of sweet.
We started our meal with a Ensalada Ranchera salad. A lovely medley of wood-grilled chicken, avocado, black beans, roasted corn, salsa fresca, cotixa cheese and tortilla strips with fresh housemade dressing. It was a fresh and light salad with a great combination of crunchiness and taste.
I suggest trying the Grilled Corn Elote which is taken off of the cobb tableside. The fresh grilled corn with savory seasonings is served with a creamy chipotle sauce.
Then it was time for the oak-roasted chicken tacos, made with smoked & roasted chicken and fresh warm tortillas. I apologize that I do hot have a photo of these but take my word, they flavorful and tender.
I have to tell you that I just loved the wood grillled fajitas with poblano chilis, red peppers and red onions. So full of flavor and served with fresh beans and rice, it is not a menu item to be overlooked. Served with fresh pico de gallo and avocado, it is Southern California cuisine at its best!
And what Mexican dinner would not be complete without something sweet for dessert? How about some freshly made churros with chocolate dipping sauce?
It was a wonderful meal and the restaurant has a beautiful bar area, a cozy fire-accented patio and a beautiful dining experience. The staff and service was friendly and attentive. It is a nice place to enjoy a fresh and casual meal. Solita also offers a nice kids menu for the littles as well.

The chocolate dipping sauce for the churros? Unreal. That’s what churros are missing!
