I saw that zucchini squash was on sale this week so that was about all the excuse I needed to make Zucchini Bread. I have not made this in a while and I am not sure why because I really love the taste of this bread. Zucchini is one of my favorite vegetables because it has such a great taste no matter how it is prepared, so today I am sharing my Zucchini Bread Recipe.
I made this while watching The Voice the other night. It is one of my favorite shows and I love seeing all these young up and coming artists compete. Plus I adore the judges and think their chemistry is fun so they make a great panel.
Back to the bread. This bread is very tasty on its own. You will not need to add any toping as it is moist and buttery.
1 1/2 cups flour
3/4 cups sugar
1 1/4 cups fresh zucchini Italian squash, grated
1/3 cup butter, melted
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Pre-heat oven to 350°. Grease loaf baking pan.In a bowl, mix together dry ingredients, butter and eggs. Add shredded zucchini to dry ingredients.
Pour into loaf pan. Bake 35-40 minutes until toothpick comes out clean.
Makes one delicious loaf. Let cool a little bit before slicing. You can also make muffins with this recipe.
The bread is also great for lunch boxes and after school snacks.
