Simple Steak Salad

I am so looking forward to this weekend. Now that the weather is getting warmer I am hoping to get out and work on my backyard. I am so inspired by all the DIY garden shows on TV and how they take an empty space and make it an outdoor living area. I will share with you what I plan and do in the coming months.

 

During these warmer evenings, I love to make a steak and salad for dinner. One of my favorite simple dinners combines both.

Steak salad is easily prepared with some vegetables and steak, but chicken or salmon can also be substituted. In this photo I used a breakfast steak because the price is reasonable.

Because I wanted to save time, I used bagged lettuce on this particular evening.

Steak Salad
steak (about 1/4 – 1/3 pound per serving)
1 head lettuce (fresh or bagged)
1 tomato, chopped
2 tablespoons onion, chopped
1 cucumber, sliced
1 egg, hard-boiled
1/2 cup gorgonzola or bleu cheese, crumbled
salad dressing
sea salt
pepper
Preheat the grill on medium-high heat. Season meat with sea salt and pepper. Grill over heat about 3-4 minutes. When steak is down, let rest for a couple of minutes.
Mix salad ingredients in a bowl. Serve salad on plates.
Slice steak and place on top of salads,
Drizzle with dressing of choice is Balsamic Vinegarette, and you can get the recipe for that here.

Simple Chopped Salad

Now that the holidays are over, I usually try to eat a little heathier to make up for all of the cookies, cakes and other goodies I samped.   One of my favorite go to recipes is a simple chopped salad.  All of the fresh ingredients are so tasty and the garbanzo beans, help to make it a filling meal choice.

4 cups chopped iceberg, romaine  and butter lettuce (any combination)

1/2 cup julienne sliced salami

1/2 cup deli turkey or ham chopped into 1/2″ pieces

3 tablespoons chopped onions

1 can garbanzo beans

1 package cherry tomatoes

1 cup mozzarella cheese

Mix ingredients together.  Chill until ready to serve.  Just before serving, toss with bottled or  Homemade Balsamic Vinaigrette Dressing.  Serve with a crusty loaf of bread.

Make Ahead Taco Salad

Today I am sharing a quick taco salad recipe which is perfect for making ahead.  With busy fall schedules, I love making this the day before we have it.  Hope you enjoy!

 

Ingredients:

1 lb. lean ground beef

1 pkg Taco seasoning (any brand)

1 head of lettuce, shredded

1/2 cup red onion, chopped

1 small can kidney beans (rinsed & drained)

1 avocado, peeled and diced

1 tomato, chopped

1 cup shredded cheddar cheese

1 bottle Catalina salad dressing (any brand)

Corn or tortilla chips

Cook ground beef in a frying pan over low-medium heat until brown.  Add taco seasoning mix packet, but do not add any liquid.  While beef is cooking, combine shredded lettuce, onion ,beans, avocado, tomato and cheese in a bowl.  Add ground beef to the mixture.  If you are going to serve this the next day or later, cover the bowl and refrigerate until serving time.  If you are going to serve soon, add salad dressing (I use about 2/3 of a bottle, but you can add more if you like).  Serve with tortilla chips and enjoy!  What is your favorite salad for dinner?

Spinach and Blackberry Salad

Spinach & Blackberry Salad - great summer salad

So as  you know, I am trying to savor the fruits of summer, before they disappear.  This is a recipe for a Spinach & Blackberry Salad.  You can use blueberries or strawberries or mandarin oranges if you like.

Spinach ingredients

1/2 cup olive oil

1/4 cup sugar

1/4 cup feta cheese

3 tablespoons white vinegar

1 tablespoon Balsamic vinegar

1 tablespoon minced onion

1/2 teaspoon Worcestershire sauce

1/4 teaspoon pepper

sliced red onion (about 1/4 cup)

1 bag fresh spinach – rinsed and torn

1  oz package of blackberries cleaned

2 tablespoons sliced almonds

Mix together the olive oil, both vinegars, sugar, worcestershire sauce and pepper.  Can I just say, that the olive oil and vinegars make a great dipping sauce.

I like to put everything in a mason jar and shake it up.

Chill for at least an hour or so.  Prepare the spinach, onion, blackberries, feta cheese and top with almonds.  This dressing is a little bit sweet, so it goes great with spinach and fruit.  Serves about 4 and can be doubled.

Easy Macaroni Salad

The weather is beautiful here in California this weekend, so we are having a BBQ at my mother’s house for Mothers’ Day.  I am making a macaroni salad becuase there is nothing like comfort food when seeing my parents.  This recipe is quick to put together, which fits in with my schedule.

Macaroni Salad

2 1/2 cups mayonnaise

1 cup chopped celery

3/4 cup chopped bell peppers (any color)

1/2 cup chopped onions

1/4 cup yellow mustard (prepared)

1 10 oz. can black olives (sliced or chopped)

2 tablespoons apple cider vinegar

1/2 teaspoon salt

1/4 teaspoon pepper

1 16 oz. package elbow macaroni

1.  Cook the macaroni according to package directions.  Rinse in cold water and set aside in refrigerator.

2.  Mix remaining ingredients in a large bowl. Once combined, add cooked macaroni and mix well.

3. Chill in refrigerator for at least an hour or overnight.
