Crandy Cane Cocktail

In preparation for the holidays, my friend Deanna and I mixed together a couple of festive cocktails.  We like to experiment and make unique drinks.   The first one we named Cape Cod Kiss and the second is a Crandy Cane.  Here are the recipes:

 

 Cape Cod Kiss

1 part vodka

2 parts cranberry juice

1 part cranberry ginger ale

Crandy Cane

3 parts cranberry ginger ale

1 part vodka

1/2 part pepperment schnapps

candy canes for garnish

Add first three ingredients in a shaker filled with ice.  Pour into a martini glass.  Hang a candy cane from the edge of the glass.

To make these drinks non- alcoholic, you can leave out the vodka.  You can substitue peppermint extract for the schnapps.

My Food Story

Simple Hummus

Today I have a simple appetizer recipe I would like to share with you.  It is an easy recipe that can be put together in about 5 minutes, if you have the ingredients in your kitchen.

Hummus Ingredients:

2 cloves garlic (chopped, I use the jar variety)

1 15 oz can garbanzo beans

4 tablespoons lemon juice

1 tablespoon Tahini (made with sesame seeds, found in the international section of a market)

1 teaspoon olive oil

Salt & pepper to taste

Put the ingredients into a blender.

Mix all of the above until smooth.  The consistency should be creamy and blended.

I like to add a little Tapatio hot sauce to spice it up, but it tastes good without it too.  I like to serve it with pita chips or sliced carrots, peppers and celery.  It is a great appetizer to pull together when you have unexpected company or just need something quick.

Simple Nutella Cupcakes

Tonight I wanted to make my son some cupcakes with Nutella.   Since we were getting ready to watch the Olympic trials on TV, I didn’t want to make a complicated recipe.  So I made white cupcakes out of a box and added a spoonful of Nutella to each cupcake before baking.

Then I swirled the batter a little bit.

After baking, I made some vanilla butter cream frosting, and put some Nutella in the bag as well.

Then I frosted them.  They taste great with just plain buttercream frosting or, even unfrosted.  You will get a taste of the hazelnut spread when you bit into them.

This is how they look frosted.  Easy peasy and took only a few extra minutes to make.
