How are you all doing today?   I want to wish you all a very Happy Valentine’s Day ! I made you all some muffins and I have tea and coffee too. Does that sound like fun?

Simple muffins, fruit muffins

I hope you all enjoy the day with whomever you are celebrating. These muffins are more like a dessert, because they are sweet.  You could even frost them and they would be a cupcake.


Cherry Chocolate Chip Muffins

2 cups baking mix

3/4 cup sugar

2/3 cup milk

1 egg

1/2 cup milk chocolate chips

2/3 cup cherries, sliced (I used canned)

Preheat oven to 400 degrees.  Line muffin tin with paper cups or grease tin.  Mix ingredients in a bowl.  Once combined, pour into lined muffin tin. Bake 14-16 minutes.

5 Ingredient Chocolate Chip Muffins

Choc Chip Muffins

Did you all have a nice weekend?  It rained quite a bit here in Southern California and when it rains, I get into the baking mood.   I did not have a little time so I whipped up some muffins.  This is a super simple recipe for Chocolate Chip muffins with only 5 ingredients.

 

5 Ingredient Chocolate Chip Muffins

2 cups baking mix

2/3 cup sugar

2/3 cup milk

1 egg

1/2 cup milk chocolate chips

 

Preheat oven to 400 degrees.

Grease muffin tin.

Mix ingredients in bowl in order listed.  Pour batter in baking cups.

Top muffin with a couple of chocolate chips so that they will show through on the top of the muffin.  This really makes the muffin ingredients “pop”, both literally and figuratively.

Pour into muffin tin and bake 14 -16 minutes. Makes 10-12 muffins depending on pan size.

Enjoy! These are especially good with a cup of tea or a cold glass of milk!

 

My Leftover Recipe

So this weekend I had some leftover cranberries from the Thanksgiving dinner we had.  I wanted to make muffins, but change it up a ittle bit.  So I not only added orange juice, but added some mandarin oranges to the muffins.

 They came out chock full of fruit flavor.  Here is the recipe:

Orange – Cranberry Muffins

2 cups flour

3/4 cup sugar

1/4 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 egg

1 cup cranberries

3/4 cup manderine oranges

1/2 cup orange juice

1/4 cup vegetable oil

Preheat oven to 400 degrees.  Butter muffin pan.

Mix dry ingredients.

Add cranberries, oranges and wet ingredients.

Blend well and spoon into buttered muffin tin.  Bake in for 17-19 minutes.

Simple Pumpkin Muffins

I could feel the temperature dropping this weekend here in Southern California.   We were busy moving our son back to college, so when I got back home I wanted to bake something I could put together pretty quickly.   I love to bake a little something on Sunday evenings as a last little celebration before the weekend is over.   I decided on these simple pumpkin muffins.  The cinnamon topping adds a tasty crunch.

Muffin batter:

1 cup sugar

1/2 cup butter, melted

1 cup canned pumpkin

1/2 cup water

2 eggs

1 1/2 cups flour

1/4 teaspoon salt

1 1/2 teaspoon baking soda

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

Mix sugar, melted butter, pumpkin, water and eggs until blended.

Add remaining ingredients.

Fill a greased or lined muffin tin and add a spoonful of topping (recipe below).

Topping:
1/4 cup sugar

3 tablespoons flour

1/4 teaspoon cinnamon

2 tablespoon butter (cut up)

Mix above ingredients in small bowl.

Bake at 350 degrees for 28-30 minutes.  Makes a dozen full size muffins.

You can use fresh pumpkin too if you steam it and blend it.  I love the way it comes out with the canned pumpkin.
