Did you know that May 15th is National Chocolate Chip Day? Not that I needed an excuse to make these delicious cookies, but it sure does not hurt right? I am making these because I have not baked cookies in a while.

These are really good by the way, my favorite chocolate chip cookie recipe ever.

This recipe given to me by a sorority sister (are there any Gamma Phi Betas in the house?),  a very long time ago. Before smartphones, …before cell phones, …before email….see told you it was a long time ago. Anyway, these cookies are super delicious and worth trying.

Best Ever Chocolate Chip Cookies

1/2 cup sugar

1/2 cup brown sugar

1 1/3 sticks butter, softened

1 teaspoon vanilla

1 egg

1 3/4 cups flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1 cup semi-sweet chocolate chips.

Preheat oven to 350 degrees. Mix together first 5 ingredients. In a separate bowl, mix dry ingredients. Gradually add dry ingredients (except chips) to the creamed mixture. Finally, add chocolate chips and combine.

Roll into 1″ balls onto greased or parchment covered cookie sheet. Bake 10 – 12 minutes.

Simple Lemon Cookies

When I need a few moments to relax, I make myself a nice cup of hot tea. There is something so soothing about tea, that I always feel more relaxed after having a cup. The only thing that makes my tea better is enjoying a nice freshly baked cookie to go with it. While pretty much any freshly baked cookie will do, one of my favorites is a soft lemon cookie.

I have tasted many a lemon cookie in my lifetime. I like lemon bars, but sometimes I just long for something a little less sweet. One of my all time favorites was the Lemon Pastry Creme cookie that the Girl Scouts made several years ago.

I am still waiting for the Girl Scouts to bring those back.

At least, I can hope.

In the meantime, I make these super simple cookies using a boxed lemon cakes mix.

They are so simple and perfect for brunch, or tea.

Lemon Cookies

1 box lemon cake mix

2 eggs

1/2 cup butter (1 stick) softened

2 tablespoons powdered sugar (optional)

Preheat oven to 350 degrees. Line baking sheet with parchment paper. Combine listed ingredients and spoon by rounded teaspoons onto cookie sheet. Bake 8-10 minutes. Let cool a few minutes before removing from sheet. You can sprinkle them with a touch of powdered sugar, if you wish.

Irish Cream Cookies

St. Patrick Day Cookies (spiked)

Happy St. Patricks Day Weekend!

I am celebrating all weekend so today I am making some Irish Cream Cookies for a party! In celebration of St. Patricks’ Day these cookies have some Baileys Irish Cream in them. This is part of the Spiked Recipe Challenge that This Gal Cooks and Frugal Foodie Mama are hosting and this month’s beverage of choice is Irish Cream. Their challenge is to come up with a recipe using the beverage for anything but a drink!

I decided to take this challenge by whipping up these cookies.

Irish Cream Cookies

1/2 cup butter

1/2 cup brown sugar

1/2 cup sugar

2 eggs

1 teaspoon vanilla

1/3 cup Irish Cream

3 cups flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt.

 

Preheat oven to 350 degrees.  Cream together butter, sugars, eggs, vanilla and Irish Cream.  Combine dry ingredients in a separate bowl. Slowly add to butter mixture.

Drop onto greased cookie sheet by 1″ balls. Flatten before baking.

Bake 14-16 minutes until golden on the bottom.

Nutella Cookies

Did you know that today is World Nutella Day?  World Nutella day was created by a blogger in 2007.  Not that I need an excuse to bake with Nutella.  But I do need to cheer myself up since the 49ers lost on Sunday. They were so close.

So now I have two excuses to make these Nutella Cookies. That is one more than I need.  These are soft and chewy and are really good.

1/2 cup butter, softened

1/2 cup Nutella

1/2 cup sugar

1/2 cup brown sugar (packed)

1 egg

1 1/4 cups flour

1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 teaspoon baking soda

 

Preheat oven to 350 degrees.  Drop by round teaspoons on a greased or teflon cookie sheet.  Bake 8-10 minutes.

Easy Peanut Butter Cookies

Did you know that it is National Peanut Butter Day in the United States?  Now, I do not need much of an excuse to bake, so this was a good one as any.  In celebration of this day I am sharing a super easy Peanut Butter Cookie Recipe.

It is made from a cake mix, so it really is simple.   This recipe is adapted from Allrecipes.

The cookies came out great and took very little time to make.

Easy Peanut Butter Cookies

1 box yellow cake mix

1 cup peanut butter (I used creamy)

1/2 cup brown sugar, packed

1/4 cup butter, softened

1 tablespoon vegetable oil

1 egg

Preheat oven to 350 degrees.

Mix together ingredients until well combined.  Roll dough into 1 inch balls onto a baking sheet.

Flatten cookies with fork.  This is the best part isn’t it? I mean, how can you not make the cute criss cross design on it?

It is nostalgic for me and reminds me of baking as a little girl with my mom.  But I digress.

Bake for 12-14 minutes.  Let cool.

My favorite way to eat these is with a glass a milk (to drink and to dunk in).

Tailgate Food (from a cake mix)

Football Cookies for Tailgate

 

If you follow my blog, you know I love to watch Bruin football.  While they are my team,  I enjoy just about about any football game as long as there is food involved, because  after all, good is half of the fun of a tailgate party.   I wanted to share a quick  and simple recipe that I use when I want to take a festive tailgate item, but do not have a lot of time.

These cookies are super easy.  All you need is a box of cake mix, eggs and butter.

 

 

 

Here is the recipe:

Cake Mix Cookies

1 box cake mix (chocolate or spice works best, but you could do white with food coloring too)

2 eggs

1/2 cup butter (1 stick) softened

Mix together cake mix, butter and eggs until thoroughly combined.   Prepare a cookie sheet with parchment paper or grease a plain cookie sheet.

Now, the tricky part is instead of forming your dough into balls, you have to make them into oblong shapes.  They do not look very attractive now, but they will.

 

Before you bake them you have to press them down on the pan so that they spread in the shape you want them to, they should resemble a leaf shape.

Bake at 350 degrees for 8-10 minutes and let cool before moving.  Once cookies have cooled, decorate them with white frosting.  First make the strings.

 

Then do the side line stripes. The cookies are nice and soft and will keep well.  Store in an airtight container.  Makes about 2 dozen.

My recipe for simple butter cream frosting is below, but if you are really wanting to simplify you can use canned frosting, with a little  powdered sugar added to make it harden.

 

Buttercream Frosting

1/4 cup butter, softened

2 tablespoons milk

3 cups powdered sugar

Cream butter with an electric mixer on low speed.  Add sugar and milk slowly, by alternating.  Whip on medium – high speed until desired consistency is reached.  Use a decorating bag cut at the end to decorate your cookies.  Let cool completely before stacking.

Pumpkin Cheesecake Cookies

Thanksgiving is coming soon and for my Canadian friends, that means this Monday!   So I made these cookies to celebrate the season.  I adapted a recipe from Sandra Lee, from Food Network, who is one of my heroes as she has inspired me to take recipes and streamline them when possible.  So here is my recipe for Pumpkin Cheesecake Cookies:

1/2 cup brown sugar

1 stick of butter or margarine, softened

1 egg (separate white from yolk)

1 package of crushed graham crackers (one of the 3 packages that comes in a box)

1 cup flour

1 teaspoon baking powder

1/3 cup whipped cream cheese (low calorie ok)

1/4 cup canned or cooked pumpkin

1/4 cup sugar

1 teaspoon vanilla

Preheat oven to 350 degrees.  In a bowl beat butter, brown sugar and egg white only.  Add graham crackers, flour and baking powder. This will be the “crust” of the cookie.

The mixture should look like this:

 

Roll the crust mixture into 1″ balls and put on a baking sheet (lined with parchment works best).  Flatten the cookie crust to make an indentation for your topping..

 

In a separate bowl, mix together cream cheese, pumpkin, sugar, the egg yolk and vanilla. This will be your topping.  Spoon this into the little pockets of your crusts.

 

 

Bake about 12 -14 minutes until set and crust is light brown.

They are just the right amount of cheesecake and crust and I always am asked for the recipe.

Simple Toffee Cookies

So another summer weekend has quickly passed.  On Sunday evenings, I like to bake a little something to top off the weekend.  It was kind late to start a cookie from scratch so I went to one of my quick cookie recipes – cookies from a boxed cake mix.  All you need are these simple ingredients:

 

 

 

1 box white or vanilla cake mix (any brand)

1 egg

1/4 cup of butter, melted

1/2 cup toffee bits

Mix together cake mix, egg and melted butter.  Add toffee bits.

Drop by teaspoons onto a greased (or coated) cookie sheet. Dough will be a little sticky.  Cook at 350 degrees for 12-13 minutes until golden brown.

The toffee in the cookie dough will melt and make the cookies smell wonderful.  Let cool and you will have a wonderful, light cookie that is fluffy and tasty.

Cranberry Chip Pecan Cookies

On some weekends when we have what seems like a million things going on, I will bake with a prepared sugar cookie mix to save some time.  With Father’s Day and my daughter’s graduation this weekend, I made these cookies using the following ingredients:

1 bag prepared sugar cookie mix

1 stick butter, softened

1 egg

1/2 C white chocolate chips

1/2 C dried cranberries

1/3 c chopped pecans

Preheat oven to 350 degrees F and mix the cookie mix and butter and egg together in a bowl.  When combined well, add the chips, cranberries and pecans.

 

Bake for 9-11 minutes, until golden brown.  Cool on rack.
