5 Ingredient Chocolate Chip Muffins

Choc Chip Muffins

Did you all have a nice weekend?  It rained quite a bit here in Southern California and when it rains, I get into the baking mood.   I did not have a little time so I whipped up some muffins.  This is a super simple recipe for Chocolate Chip muffins with only 5 ingredients.

 

5 Ingredient Chocolate Chip Muffins

2 cups baking mix

2/3 cup sugar

2/3 cup milk

1 egg

1/2 cup milk chocolate chips

 

Preheat oven to 400 degrees.

Grease muffin tin.

Mix ingredients in bowl in order listed.  Pour batter in baking cups.

Top muffin with a couple of chocolate chips so that they will show through on the top of the muffin.  This really makes the muffin ingredients “pop”, both literally and figuratively.

Pour into muffin tin and bake 14 -16 minutes. Makes 10-12 muffins depending on pan size.

Enjoy! These are especially good with a cup of tea or a cold glass of milk!

 

Peanut Butter & Chocolate Chip Cookies

The other day I wanted to make some cookies for my son and he loves Reese’s peanut butter cups, so I decided to make my own version in a cookie.  So here is my recipe for Chocolate and Peanut Butter Chip Cookies.

2-1/4 cups all-purpose flour
3/4 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
2 eggs
1 cup chocolate chips
1 cup peanut butter chips

Preheat oven to 350 degrees.  Cream together butter, sugars and vanilla until combined.  Add eggs and mix together.  In a separate bowl, mix together flour, baking soda and salt.  Add the dry mixture to the wet ingredients.  Add both chocolate chips and peanut butter chips.

 

Don’t they look happy together? Drop cookies onto greased or coated cookie sheet and bake 8-10 minutes.

 

 

 

They really do taste like a peanut butter cup in a cookie form! They also keep well in an airtight container.  I sent these to him at college through the mail and he said they tasted great.

Simple Chocolate Crossionts

We just got back from a trip up north and came home on Sunday.  When we got home, I wanted to make a simple dessert, but I didn’t have many ingredients since we had been out of town and I had not done any grocery shopping yet.   We were even out of ice cream.   So I went to my “go to” simple dessert.

All you need are these ingredients:

You prepare the crescent rolls as directed, but you just add a sweet ingredient such as a dollop of jelly or in this case, some chocolate chips.

If you do not have chocolate chips, you can use other items, such as jelly, nutella, caramel, etc.  Prepare the dinner crescent rolls as directed, and I recommend adding a minute or two to ensure that they are fully cooked, but not overdone.  When they come out of the oven, I will dust with powdered sugar.

Honestly, it is one of the simplest desserts ever.  What is your simple dessert when you do not have a lot of time to prepare?
