Simple Quiche

This is a simple quiche recipe that is perfect for a holiday morning.  You can make it ahead of time, which I often do. In this example I used bacon, but you can add vegetables, sausage or ham if you like.   You can even switch up the cheese and add monterey jack or jalepeno cheese.  I love recipes where I can change up the ingredients very simply.

Simple Quiche

1 frozen pie crust, thawed

6 eggs

1 cup cheddar cheese

1/2 teaspoon nutmeg

1/2 cup milk

6 strips of bacon, cooked and chopped

 

Mix eggs, milk and nutmeg in a bowl.

Poke holes in the pie crust,

Add the bacon on top of the bacon,

add cheese,

pour egg mixture into pie crust

dot the top with some butter slivers,

Place quiche on a cookie sheet and cook 20 – 30 minutes until top is golden and puffed.

Simple Quiche

It is a family favorite and is great for breakfast and brunches.  To make ahead, you can prepare completely and reheat the next day or prepare the crust and eggs separately, then pour egg mixture and bake in the morning.

Simple Pumpkin Pancakes

So now that it’s officially fall, I am ready for some fall breakfast.  Today I made some really simple Wheat Pumpkin Pancakes.  I use a pancake mix to save some time.  I chose a wheat mix as a base.  Here is the recipe:

1 1/2 cups pancake mix

3/4 cup plus 3 Tablespoons milk

1/3 cup canned pumpkin

1/4 teaspoon Pumpkin Pie Spice

 

Preheat a skillet or flat grilling pan on medium heat.   In a bowl, mix ingredients together until almost lump-free.

 

Mix ingredients until batter is pourable.  Pour onto hot skillet.  I like to make mine mini-size.

 

Cook over medium heat until light-medium browned.

 

Serve with syrup and/or whipped cream if you wish!

Blueberry Coffee Cake

I love when the weather gets warmer and spring time brings fresh fruit to the market. This morning I am making a blueberry coffee cake that is tasty, but not overly sweet.

Blueberry Breakfast Cake

2 cups all-purpose flour
1/2 cup sugar
2 t baking powder
1 egg, lightly beaten
1/2 cup milk
1/4 cup butter/margarine, softened
1 t grated lemon peel
2 cups fresh or frozen blueberries
TOPPING:
1/3 cup sugar
1/4 cup all-purpose flour
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
3 tablespoons cold butter or margarine

Grease a cake or square baking pan. In a bowl, mix the first three dry ingredients. Add egg, milk, butter and lemon peel and mix together. Add the blueberrys and stir gently. Set aside. In a separate bowl, mix topping ingredient until crumbly. Sprinkle over batter. Bake at 350 degrees for 45 minutes. Enjoy!
