
Today my family and I celebrated my Mother and Father’s birthdays. My father is a few days shy of being 90 and my mother is in her eighties. We celebrated at my parent’s home in the house I grew up in. It was a wonderful day and I am blessed that they are both in my life. They both have health issues, but we were able to forget them today. My mother asked for apple pie instead of cake so that is what we had for dessert.
Later that evening, I decided to continue with the apple theme and I made some apple cinnamon rolls. It is a very simple recipe and uses the following ingredients:
Apple Cinnamon Rolls
3/4 cup applesauce
1 teaspoon cinnamon
1/4 cup brown sugar, packed
1/4 cup crushed candied pecans
1 package crescent rolls
Icing
3/4 cup confectioner’s sugar
2 tablespoons milk
Preheat oven to 375 degrees. Mix te first four ingredients in a small bowl.
Open the crescent rolls and spread out the dough.
Spoon the applesauce mixture in a thin layer on top of the rolls.
Take a knife and slice the dough the long way, rolling up each strip.
Place each roll on the cookie sheet.
Bake on greased or coated cookie sheet for 10 – 12 minutes.
The applesauce and pecans will burst through the top of the rolls. While rolls cool, mix icing ingredients. Frost rolls after a few minutes of cooling.
