Pecan Cookies are a nice idea when you want to bake something other than traditional chocolate chip cookies or peanut butter cookies. Not that I do not love those cookies, but sometimes I just like to change things up. These are made using the candied or glazed pecans that you find in the nut aisle of the grocery store. I often use these in summer salad recipes, but when I do not want them to go to waste, I use them in baking recipes like this one.
Pecan Cookies Recipe
1 cup butter, softened
½ cup brown sugar
¾ cup sugar
2 eggs
1 teaspoon vanilla
2 ½ cups flour
1 teaspoon baking soda
¾ cup candied pecans, crushed
In a mixing bowl, cream butter and sugars together.
Add eggs and vanilla and mix well.
Slowly incorporate flour and baking soda (it is best to blend these two together first and then add flour mixture to batter).
Fold in crushed pecans. I crush my pecans in a baggie by pounding with a meat tenderizer. A quick way to prepare them for baking.
Drop cookies onto a greased cookie sheet about 2 inches apart.
Bake for 8 minutes or until lightly browned.
Another great cookie recipe made with pecans is these Pumpkin Pecan Cookies. I have this rule that I do not eat anything pumpkin flavor until at least Labor day, but these are so good to eat because they are soft and crunchy at the same time.
