Easy Zucchini

This is a quick zucchini side dish for a BBQ, lunch or dinner.  What is really nice is that you do not need a lot of ingredients. It is perfect for a dinner following a trip to the farmers’ market. You can also substitute banana squash for the Italian squash. This dish is also very versatile and goes with meat, fish, seafood or even as a tasty dish by itself over rice.

All you need is a little olive oil, some spices and these vegetables. It is a family favorite and really easy to make.

Easy Zucchini

2-3 italian squash, sliced

1/4 cup red onion, diced

2 tomatoes

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon basil

Heat one tablespoon olive oil over medium heat. Slice zucchini and chop tomatoes and onion.  Add zucchini to the heated pan for about 2-4 minutes or until squash becomes tender. Add chopped onion and stir. Add tomato and stir the vegetables.

Cook for an additional 2-3 minutes and season with salt, pepper and basil.

Easy Zucchini

Makes 4 1/2 cup servings.Serve promptly. Enjoy!
