One of the things I love about summer is going to barbeques and chilling in the sun. We recently went to a friend’s barbecue and I took my Pepper & Broccoli Pasta Salad. We were having a good time talking about the “old” days, which did not really seem so long ago.
Broccoli Pasta Salad
5 cups broccoli, raw
4 cups bow tie pasta, cooked and drained
1 cup mayonnaise
1/3 cup sugar
1/4 cup red wine vinegar
1/4 cup red onions, chopped
1/4 cup bell peppers, chopped (I like to use red for color)
1 cup grapes, sliced
6 slices cooked bacon, chopped
1/2 cup praline pecans, chopped
1 teaspoon salt
1/4 teaspoon pepper
While the pasta is cooking per package directions, cut the broccoli into small florets. Set aside and mix together mayonnaise, vinegar and sugar. Once blended add other remaining ingredients.
When pasta is cooked, drain and rinse in cold water. Add to salad mixture. Chill at least 1 -2 hours.
This pasta salad is great for a barbeque, potluck or side dish.
