Szechuan Beef With Snap Peas

Today I want to share a recipe with you for those days when you come home from a long day and really do not feel like spending lots of time and energy making dinner.

You know what I am talking about and have days like that too, right?

Well, the other day I had one of those days that by the time I got home from work and ran errands, I did not want to prepare a complicated meal.

My recipe for Szechuan Beef with Snap Peas can be prepared really quickly without a lot of effort. I used Minute® White Rice because it only takes 5 minutes to cook. While the rice was cooking, I whipped together the sauce and pan fried the meat. You can use any cut of beef, I used top sirloin. It is always a hit, because it is flavorful, healthy and tastes great. I would love for you to try it.

Here is the recipe:

Beef with Snap Peas

3 cups Minute® Rice, prepared

1 lb. beef or chicken, cut into bite-sized pieces (top sirloin or flank work well)

1 cup sugar snap peas

1/4 cup soy sauce

1 tablespoon sesame oil

1 teaspoon chopped garlic

2 teaspoons corn starch

1 teaspoon sugar

3/4 teaspoons red pepper flakes

Prepare rice as directed. I used Minute® White Rice, but you can use their 100% Whole Grain Brown Rice too. The Brown rice just talkes a bit longer and both are gluten free, by the way. The white rice only takes 5 minutes to cook, so while it is cooking you can start on the other ingredients.

Heat the sesame oil over medium high heat. Add sugar snap peas and saute for about 3 minutes. Add beef, garlic and red pepper flakes. Cook a few minutes until meat is nearly done.

While meat is cooking, whisk together the soy sauce, cornstarch and sugar in a bowl. Add to meat and fry two to three minutes to allow sauce to thicken.

Serve over hot fluffy rice and enjoy!

This recipe can also be made substituting chicken or tofu for the beef if desired. This recipe serves 3 and can be doubled.

  5. Just made this for the kids. We love it. We think we could substitute brocoli and/or cauliflower for the peas. I would tone down a bit on the red pepper as I am a wimp when it comes to spices. BUT…this is a keeper. THANK YOU!
