This weekend I felt like having a spicy snack so I made individual jalapeno dips. These have a little kick so if you like things on the mild side, reduce the jalapenos by 1/2. These can be put together in about 15 minutes.
Ingredients
1 8 0z tub cream cheese (I used the one with lower fat)
1/3 cup mayonnaise
1 4 oz can chopped jalapeno peppers
1 4 oz can chopped green chilies
1/3 cup parmesan cheese
1/3 cup bread crumbs
Preheat the oven to 350 degrees. Mix the first four ingredients in a bowl. It will look less than appetizing but it gets better.
Put into a baking proof dish or into individual ramikins or oven proof mini-souffle dishes.
Top the dish or dishes with equal parts parmesan cheese and bread crumbs.
Bake in the oven 10 – 12 minutes until bubbly.
Let cool a few minutes and serve warm with chips or crackers. You can put a slice of jalapeno on it for garnish.

Ooh yum, sounds great! I am a huge wimp when it comes to spicy things; somehow I’ve managed to go all 25 years of my life without really ever even trying anything spicy, and of course the downside now is that even the mildest things taste SUPER spicy to me because I’m not used to any spice. Oops. But this would probably be good without the jalapenos, my hubs can have mine cuz he really likes spicy things
