This is a quick side dish for a BBQ, lunch or dinner. All you need is a little olive oil, some spices and these vegetables:
2-3 Zucchini
1/4 Cup Red Onion
2 Tomatoes
Spices (salt, pepper, basil & any others you want to add)
Heat one tablespoon olive oil over medium heat. Slice zucchini and chop tomatoes and onion. Add zucchini to the heated pan for about 2 minutes. Add chopped onion and tomatoe and flip zucchini.
Cook for about 2-3 minutes and season with salt, pepper and basil.
Enjoy!
